AdviceWithASide :: Happiness {Vegan Carrot Cake Bars Recipe with Pumpkin Nicecream}

It's something that we all want, though we grow to search for it more as we grow up, as worries evolve to become more consuming.

So we search for a way to fill a cliff fall of greed, an unappeased source of restlessness, the hidden calls of loneliness. Sometimes happiness is a choice, sometimes its a lifestyle that comes with many, many obstacles.

New Year's Resolutions can occasionally be a silent sign that you are completely miserable. You're trying to search for a flaw in your existence and convincing yourself that fixing it is going to be the key to a better life for yourself. That's a terrible cage to lure yourself into. If you set yourself up for failure, how are you going to take the hit with a new realization that there is something you want to change about yourself, but haven't?

This is not some kind of catharsis calling.

But I feel like I want everyone to hear the simple three things that are fulfilling enough for happiness. The secret to being happy. And it's really easy. Just love. And I know that it's so much easier to say than to do, but really - watch the video and hear me break it down for you.
I just really want to push in your face the idea that you are SO worth every little bit of life you occupy.


And also push in your mind a drool-worthy craving of this celebrated swirl of ice cream and pastry crumble - only HEALTHIFIED. I know, right? You have to try it.

Food Relation: In these cake bars and in this "ice cream," there are incredible superfoods hidden in the delicious tastes. I mean, pumpkin has colossal dosages of fiber that keep everything in your system running very smoothly. Carrots are full of beta-carotenoids that do your eyes good.
Basically, relate that to life. About how sometimes, it seems too hard to experience, or foresee, or know how events are good for you.
But sometimes, the goodness, the benefit, is just hidden.


Vegan Carrot Cake Bars with Pumpkin Nicecream

This is the star breakfast of your dreams. Full of hidden good carb vegetables. But delicious. Eat in bed, dream of fall. Fall asleep, and actually dream. Of this.

Prep time: 15 min
Cook time: none - we're raw!
Total time: as much as you spend decorating
Yield: 1 giant bowl that you can hoard

Serving size: the whole dang thing, treat yourself
Calories per serving: what you deserve to eat
Fat per serving: this is a high carb low fat raw vegan recipe

Frozen Bananas, Sliced: 5 nanners
Almond Extract: 1 teaspoon
Pumpkin Puree: 1 cup
Coconut Sugar: 3/4 cup
Carrots, Chopped: 2 medium carrots
Oats, Raw: 2 cups
Raisins: 1 cup
Agave Nectar: 12 tablespoons
>> Need: food processor, freeze-safe mold of 8
  1. Freeze 5 bananas overnight.
  2. Place oats in food processor and pulse until flour-like consistency.
  3. Toss in raisins and pulse with oats. Will become more crumbly.
  4. Chop up carrots very thoroughly, then process along with mixture. Process until moldable consistency.
  5. Press very tightly into molds. I used a mold of 8 ice cubes.
  6. Pour 2 tablespoons of agave nectar atop each mold.
  7. Cover and freeze.
  8. Take out sliced frozen bananas.
  9. Process with cup of pumpkin and almond extract until soft serve consistency.
  10. Swirl with coconut sugar and top with crumbled carrot bars. Enjoy!
