Yesterday (Sweet and Salty Topped Toast Recipe)

Yesterday, I went to school. I almost fell asleep for a few classes; I battled a few questions about how I get my protein; I biked home, had this snack, went out to eat with my family for my mother's birthday... And then I found out about all of yesterday's tragedies.


Yesterday, November 13, 2015, Paris was attacked by terrorists. Japan's 7.0 earthquake dropped. A funeral in Lebanon was bombed.

And here I am, cozy in my room with the heater turned on, reclining in a beanbag... Entitled to my first-world sense of safety. I complain about getting an education and the work involved. I think that my biggest problem is choosing which university is the biggest accomplishment. I am overwhelmed by all the knowledge that I am privileged to learn.


Here I am, complaining about my privilege, and out there are others that are suffering.

The death toll of Paris could be over 150. It hurts my heart that things like these happen. It breaks my reservoir of emotions, and I simply don't understand why people could think that hurting and killing and murdering is a good idea. I cannot begin to guess at what goes on in these people's heads, if they know the consequences of their actions.. Or if somehow their beliefs have indoctrinated them to think these actions necessary for the greater good. Just know that these people do not represent any population, religion, or sect. Perpetrators of violence only speak for themselves with actions like these. Yet, we know not why they do these things, we cannot comprehend... It's simply a mystery left to God.


Here I am, knowing now to be grateful for problems as safe as mine. Here I am, earnestly praying because I do not know how to begin to guess at what the reason could be behind this violence. Here I am, enlisting God to give His mercy to those suffering in every corner of the world today. Here I am, asking God why on Earth would this happen. What part of His Greater Plan is this? Here I am, hurting for those hurt, and hoping that the hurt is soon soothed by comfort and relieved by joy.


Recipe: Vegan Sourbread Slices
Toast lightly. Spread hummus thickly. Top with sliced cucumbers and tomatoes. Sprinkle pomegranate arils over. Eat.

Procrastination Feelings

My apologies. I've been quite absent because of this cooling off period after being busy for my life. Sometimes you get the ball rolling in life, and when you finally get to rest for a little, the moss begins to grow on that once rolling stone. That's what happened.

Bekah and I have some exciting news!!


I guess the fact that school is this daunting figure in the fog isn't helping.
I have to face the do-nothing feeling of procrastination that has engulfed me lately.
But to be honest, I'm kind of stuck in this rut of minimalism. And not the hipster lifestyle of living with the smallest footprint on the world. More like glorified lazyness.

Honor, Acknowledge, Salute

Springer has a message that it's taught us. Honor the past, acknowledge the present, and salute the future.
It's been a while, yes. But I've been on a bit of a busy hiatus because a) BUSY-NESS b) business.
I've been occupied with two weeks of interning at the Springer Theatre Academy, and it's been draining. So after a few days of recuperating and getting my crap together, I've got a few doting things to spill. Here's a picture of me with my lovely, wise intern captain, Jessi.


And I've been doing a lot of thinking about Prep School Health Freak. I've been kind of rushing the latest recipe posts, and really just not putting as much soul as I did when this site first started out. I think part of the problem is.. I'm starting to treat this as solely a recipe site. But what makes me fall in love with sharing with you all the more is being able to impact others with my words.

I Love My Mother (Mother's Day Recipe)

There was a big confession today. I uploaded my story, and the sole purpose was because I wanted to help others. If offers hope, an ability of empathy, or awareness / a sense of what it's like to even ONE person... It was worth it.


And even though the story may seem like it targets my mother as the cause of my struggle, please understand that my mother was also my way out. I love her, and I wanted to share a special Mother's Day recipe dedicated to her.

Mother. Did you know?
I knew this was high school. And I knew this was a new school. Before the light-filled apple dropped in Times Square, New York, I asked you with plagues of doubt if you would give me money were I to fix my body.
To be honest, I don’t think you understood the hate that would fill me when you said yes.
We settled on a lump sum of two hundred dollars for me to dump these twenty pounds.
There was so much that I started with: cutting this, cutting those, slowly cutting the skin off of my frame so that I could re-stitch an ideal body.


But Mother, did you know?
You once told me I was fat. You once told me I was ugly. You don’t remember, because to you they were just insignificant pieces in your repertoire of blunt remarks. To me, they were a little deeper. A snag on my self-esteem with a jagged piece of demolition that started to fester into a deeper rot of hate.

Inspired: I'm the kind of person that is the queen of selfish stress. Perfectionism is both my redeeming and condemning quality. Sometimes I can exploit my stubbornness and be able to accomplish goals I never though myself capable of. Other times, I will find myself caught in a destructive cycle of jealousy, wishing my life was more than what I have.
The things I get stressed about don't effect anyone but me: grades, reputation, appearance, friends, schedule, time management, accomplishment. I'm always worried about myself, so much so that I lose sight of what truly matters. I keep getting stuck in the mindset of what my life has to look like to be perfect that I forget the perfect One who gave me life.


I need to recenter my life. Off of myself, back on Jesus Christ.

Eat&Evaluate : Big Hero 6 (Vegan Sushi Recipe)

What's Special:
Unfortunately, I missed Big Hero 6 in the theaters, and watched it on rental, so there is no supplementary cover art for the movie. But to make up for that, I made the sushi BH6 color themed. It's the least bit of a tribute that I could give to Disney's newest animation. Modeled after the advances of technology in Japan and using that backdrop to spin an engaging story that echoes an Avengers-Power Rangers feel, it may not seem like the most entrancing movie, but I learned that this film is certainly not one to judge by the cover.

Partially inspired by the fact that I recently and spontaneously received a rabbit. Yes, a rabbit. {Perhaps the lack of vegan friends has boiled down to that, you know? ^.^} I am henceforth inspired to go places. My rabbit - whom my sister has named Oreo because of the markings - is confined in a cage for five days out of the seven in a week, due to the time that the family simply does not have during the weekdays.
Well, I don't want Oreo in a cage to be a metaphor in my life.

One thing I need to say first about Martin Luther King: husbands must take example of the role he didn't prohibit his wife to rise up to. Coretta Scott King was an activist right along with her husband, took over when he was assassinated, and is the very reason we have a nationally recognized memorial day. And yes, he completely deserves it.
